BBQ Accessory Review: Chicken Thigh Satay On The @WeberGrills Q Using Charcoal Companion Raft Skewers

Got home on the later side last night and was famished.

Sliced up some skinless/boneless chicken thighs into strips, dredged them in my favorite peanut sauce and skewered them for a quick cook.   I prefer boneless/skinless thighs over the tenders or breast because it’s juicier and cheaper 9 times out of 10.

Note the dual prong skewers.  I’m not a fan of single prong skewers because your meat or vegetables spin around when you try to flip the skewer.  These raft skewers are way easier to handle and keep your food from flopping around and are only $7.32 on Amazon for a set of 4.  Link to purchase here

Review: Killa Grilla Grate Break In Cook With Some Atomic Buffalo Turds

As a fan of the classic Weber 22 inch grill, one of the things that makes them so great is that they haven’t changed the dimensions of the bowl in decades making the aftermarket accessory market robust.

My pick For Instant Read Thermometers- The Javelin Pro

Using an instant read thermometer takes any guesswork out of your cooks.  You pay lots of money for good cuts of meat, you can eliminate the chance of ruining your meat by overcooking it or serving something that is woefully under cooked by using an instant read thermometer and knowing at what temps certain meats are done to your liking.

On most BBQ forums people rave about the Thermoworks Mk4 instant read thermometer.  It’s a great thermometer.  A friend has one, I’ve used it.  It’s also $100 and if you’re lucky there’s a %15 off sale so you can get it for $85.

After reading a ton of reviews I bought a Javelin Pro instant read thermometer.  It’s virtually the same durable build quality and its half the price.  I absolutely love mine.

On America’s Test Kitchen they reviewed a ton of instant read thermometers and the reviewer calls the Javelin Pro the best mid priced unit and also goes on to say the MK4 is the best, but now they also say Lavaworks is better for the price.

I could write a long review but I figure I’ll just give the quick and dirty. I’m a long-time Thermapen owner, so I know and expect more from a thermometer, and this Javelin measures up in every category!!! I got this on a lighting deal as an Xmas gift and my old regret is not buy 4 more of them for others. I did not get a free item to write a review.

I tested this against my 3 year old Thermapen. It not only registered faster, but both read within a tenth of one another for readings, confirming it’s accurate. I give bonuses to the backlit display and much lower price point. Add in that is read quicker or just as fast as the industry standard Thermapen, and this thing is a winner in my book. Only advantage to the Thermapen is that it came with a case, but considering the price point, I can live without that little add-on item.

Buy one of these and don’t look back. Great deal!!

The Perfect Fit Cast Iron Griddle For The @WeberGrills Go-Anywhere

When I pulled this Cast Iron Griddle out of the shed to cook swordfish on the Charcoal Weber Go-Anywhere I figured that I’d probably have to drape it over the sides of the grill.  Here’s a link to buy it on Amazon  It’s $35 and that’s a steal for how versatile it makes your grill!

When I checked, it fit perfectly in the groove where the cooking grate would go without any need to modify it.  It’s like a stock accessory.  Not only that but has enough space open on the sides to allow air flow to the coals to get that cast iron piping hot for searing.

THIS MAY BE THE BEST PORTABLE CHARCOAL GRILLING SETUP EVER!!!

As you can see it fits perfectly inside the grooves where the cooking grate would sit.  It doesn’t impede the lid from closing , the lid still latches on the edge of the back of the grill.  I swear when they designed this griddle they had to be thinking of the Weber Go-Anywhere!

Setting Up The @WeberGrills Go-Anywhere For Deflector Plate Cooking Lamb Shanks

Trimmed the silver skin off the lamb shanks and rubbed on EVOO, minced garlic,coarse salt and pepper, rosemary and thyme.

Plan is to smoke offset the coals between 250-275 til 150 internal temp.

Picked up two lamb Shanks at East Gloucester Stop and Shop.

Trimmed the silverskin and rubbed with EVOO, coarse salt, pepper, minced garlic, rosemary and thyme overnight in the fridge.

Setup the grill for indirect smoking using the deflector plate. See video at the top for commentary.

In the video I planned to light five briquettes in a chimney and add them to the unlit coals on the opposite side of the grill from the drip pan. What I ended up doing instead was lightning a Weber starter cube in the corner instead. Within 20 minutes I had 200 degree temps and closed the back vent and left the front vent had open. I also closed the top vent over the coals and left the top vent over the lamb open.

Then placed the Shanks on the grill with the meaty part facing away from the lit coals.

After an hour and a half they had the color I wanted.

I took the Shanks off, put them in the drip tray with the juices they lost and added some beef broth and Blueberry balsamic glaze to the tray and double wrapped it in foil to braise.

Back on the grill they will go at 275 for an hour and a half or so.

Placed the shanks on the cutting board and started ripping off globules of lamb love and dipping in some homemade tzaziki.

 

Quality Grill Parts Heavy Duty Stainless GrateThe @WeberGrills Smokey Mountain Smoker and Weber Rib Rack Review

After purchasing the Quality Grill Parts Heavy Duty Stainless Charcoal Baskets I was so impressed with how well they were built and the quality of the material I wanted to upgrade the grates on my 18.5 inch Weber Smokey Mountain Smoker.

I planned to cook up four racks of pork ribs for yesterday’s Pats/Texans playoff game.

Only problem was that fitting four slabs of spare ribs on an 18 inch WSM I was going to need to use a rib rack. The Weber Rib Rack for $12.99 is a nice value, purchase here.   It’s well built and designed.  The slots are spaced enough apart that the ribs don’t lean up against each other.  When comparing them to the Char Broil ones they both had nice builds but the Char Broil one had six slots instead of five which would have placed the ribs closer together and if the ribs are leaning up against each other they won’t develop bark where they touch.

Trimmed the spare ribs into St Louis cuts which basically squares them up.

The Quality Grill Parts  Heavy Duty Grate for 18.5 inch Weber Smokey Mountain did not disappoint in terms of quality compared the the charcoal baskets I bought from the company.  Same over built, high quality 304 stainless construction.  Comparing the build to the grates that come with the WSM it’s night and day.  They cost $40 on Amazon- purchase here

STOK Cast Iron Grates On The Weber Performer

Last night it was brussel sprouts, mushroom and onion skewers and ribeyes on the 2009 Weber Performer Deluxe.

Decided to swap out the standard Weber grates for the cast iron ones on the STOK.  Worked out well using the STOK veggie basket insert to grill the brussell sprouts which were lightly coated in evoo , Atlantic Saltworks Salt and crushed black pepper.
